Lolly, a provider of hospitality technology, has announced that SnapServe Pro, its new AI-powered tray-scanning solution, has entered live customer trials, marking a milestone ahead of its wider market rollout.
Developed in-house by Lolly’s product and technology teams, SnapServe Pro has been designed to work seamlessly across the wider Lolly hospitality technology ecosystem. This enables operators to benefit from tray scanning without compromising access to functionality that is often restricted or harder to achieve with standalone solutions. By combining AI-powered checkout with operational integration, SnapServe Pro aims to make tray scanning a viable option for a wider range of hospitality and catering environments.
SnapServe Pro uses a new three-camera system to automatically recognise items and build a customer’s basket, removing the need to scan individual products. Customers place their tray on the counter, where three cameras capture the contents from multiple angles. This gives the AI a complete view of every item on the tray, helping it accurately identify products that may be partially obscured, stacked or positioned differently. AI-powered object recognition then identifies each item and automatically creates the basket.
Once the items have been recognised, the customer checks the order, taps their card to pay, and completes the transaction, all within a matter of seconds.
While Lolly previously offered tray-scanning functionality through a third-party provider, growing demand for frictionless checkout combined with the company’s strategy of developing core technology internally led the team to create its own AI-powered solution.
Chris Brown, Technology Director at Lolly, said: “The goal is incredibly simple from the customer’s perspective: put down your tray, confirm what’s there, tap and go. Achieving that simplicity has involved a huge amount of work behind the scenes. We experimented with different camera configurations and various machine learning models, developing our three-camera system, giving the AI a much clearer understanding of what is sitting on the tray.”
Peter Moore, CEO at Lolly, said: “Hospitality is changing. Guest expectations are rising, teams are under pressure, and operators are being asked to achieve more while managing tighter budgets. Technology needs to respond to those very real operational challenges.”
Moore added: “That’s what we mean by practical innovation. AI and automation shouldn’t be introduced simply because the technology exists; they need to improve the customer experience and make operations smarter for the business. This is where we see the next generation of hospitality heading: smarter, more connected experiences that make things simpler for both customers and operators.”
